La distillerie Shizuoka est l’un des principaux fabricants indépendants de whisky au Japon. Elle utilise du cèdre provenant des forêts voisines pour répondre à la demande mondiale croissante de whisky.
Cette année marque les 100 ans de la fabrication du whisky au Japon. Il existe plus de 100 distilleries autorisées, soit deux fois plus qu’il y a dix ans. Shizuoka se distingue par son feu de cèdre particulier. L’industrie du whisky au Japon a connu un boom après 2008, et il est devenu populaire dans le monde entier. Les plus grands fabricants de whisky comme Suntory et Nikka se sont développés pour répondre à la demande. De nouvelles entreprises, y compris des investisseurs étrangers, entrent sur le marché.
Certaines personnes craignent que la qualité ne diminue avec l’arrivée de nouveaux acteurs et que la réputation du whisky japonais n’en pâtisse.
